The Chef with the dragon 🐉 tattoo

Pandelis sits on his high stool overlooking the road, he is smoking a thin sigaret 🚬 and stares  in deep thought. This chef is the master of Greek cuisine, the Jonny Depp of the kitchen in his restaurant AAA  In Agios Konstantinos.  He even looks like a pirate 🏴‍☠️ with his black bandana and little beard , Right now he is making funny faces at me .🤪

We have a special privilege today we are Invited to the chefs domain for a glimpse of his best kept secrets: the preparation of some typical Greek dishes, the spices and herbs he uses and the magic he creates with the amazing combination of flavors.To be honest I am not a connoisseur of haute cuisine and also not a person who writes food reviews but this is an experience you can not miss, or maybe I should not tell you ? 

Like in fairytales I never understood when Joris finally finds the dragon 🐉  hiding in a cave  why would he run back to the village and tell everyone ? Then upsetting all the people just to try and mobilize everyone to see who is brave enough to fight it ?  I mean if you are lucky enough to encounter a dragon 🐉 in your  lifetime, wouldn’t it be better to keep this secret and visit this mythological creature a few times by yourself and learn from it  maybe ? 

We sit at our regular table in the restaurant, and wonder what he is going to cook for us today. His stuffed goat is famous in fact all the meat dishes on the card are so delicious very juicy, tasty and delicately combined with only local herbs and spices. Lamb with rosemary or chicken with orange and local wine. Of course the Moussaka and Pasticcio are phenomenal, And not least the huge salads are a colorful piece of Art every time.

Behind the window we can see the flames 🔥 lighting up high. By the shadows it looks like the chef is fighting his furious dragon, and in fact he is fighting. Because AAA restaurant does not have sea view, and it is not located in a touristic hotspot or on a crowded boulevard. It is hidden like a cave on the road from Kokkari to Karlovasi. You have to look for it and taste it and this can only happen if you are lucky enough someone has shared this secret with you.
